Apple Brandy When the Ashes Settle is the barrel-aged version of our Troon Brewing collab released at Dark Daze 2023. The original concept was a complex, viscous candy apple-inspired imperial stout conditioned on Laird's Apple Brandy-soaked apples. Ghirardelli caramel sauce, whole Madagascar vanilla beans, roasted Virginia peanuts, and a touch of freshly-ground Vietnamese cinnamon. After conditioning on the adjuncts, we filled a handful of freshly-dumped Laird's Apple Brandy barrels and stashed them away for 16 months. Post barrel aging, we find ourselves with an amazingly layered and polished version of the original release. Notes of warming Apple Brandy, sticky caramel, melted milk chocolate bars, creamy peanut butter, with a subtle hint of baking spices. Full-bodied with a restrained sweetness.

Barrel Aged Sky Summoner is the barrel-aged version of our collab with Horus Aged Ales, released at Dark Daze 2023. The original recipe was a mash-up of Kyle's base imperial stout mixed with one of our house imperial stouts, then we conditioned that beer on Wild Thai banana, toasted coconut, and whole vanilla beans from Uganda, Tahiti, and the Congo. We then took that beer post-conditioning on the adjuncts and aged it in a blend of Blis Maple Bourbon, Laird's Apple Brandy, and Willett Family Reserve barrels for 16 months. The final result is an incredibly refined version of the original release. All the adjuncts have married quite nicely and now have become an added complexity, all with a prominent spirit/oak backbone. Notes of Mounds candy bars, Banoffee pie, Cocoa Puffs, and maple-drenched chocolate chip pancakes. Incredibly drinkable and not overly sweet.

Bourbon Barrel Overwhelmingly Ridiculous Extra Oustanding Sleeping Forever Batch #2 is our anniversary Imperial Stout Sleeping Forever aged in a blend of Willett and Russel Reeserve Bourbon barrels for an average of 34 months. We took that blend and conditioned it on hundreds and hundreds of pounds chocolate sandwich cookies. Notes of melty chocolate fudge, creamy vanilla frosting on a vanilla cupcake, assertive but approchable Bourbon heat, and sticky chocolate chip cookie dough. If you were a fan of Batch #!, you're going to love this version.

Bubble Wrap is a special blend of Imperial Stouts from our buds Other Half, Weld Werks, Side Project, and Angry Chair! This super limited blend comprises a single barrel from each participating brewery, all sent to each other, and then blended at each brewery. The final result is an incredibly complex barrel-aged imperial stout showcasing the best qualities of each respective brewery. This full-bodied blended imperial stout has notes of Milky Way candy bars, dense Vietnamese coffee, Klondike bars dipped in hot chocolate, and complex whiskey aromatics. Maple Bourbon Sleeping Forever (2025) is our anniversary Imperial Stout aged in BLiS Maple Bourbon barrels for 41 months. Buried deep in our barrel cellar, we found a pair of Maple Bourbon Sleeping Forever. We pulled the nails to sample them, and to no surprise, they tasted incredible! Notes of maple-drenched chocolate chip pancakes, caramel syrup on rocky road ice cream, and a warm bourbon swirl. Despite these tasting notes, the final expression is balanced with minimal sweetness.

Xtreme Slumber is a blend of Double Barrel Eternal Slumber: Extended Age, which is a blend of Sleeping Forever aged in Buffalo Trace Bourbon, French Cognac, Laird's Apple Brandy, and BLiS Bourbon maple syrup barrels aged for approximately 18 months. That blend was then aged again in Buffalo Trace bourbon barrels for an additional 36 months. We took those barrels and blended them with Sleeping Forever Xtreme: Extended Age aged in Old Fitz, Elijah Craig 8yr, and Laird's Apple Brandy barrels for 32 months. We took that blend and conditioned it on a classic combo of freshly ground Vietnamese cinnamon and fresh whole bean Madagascar Vanilla. The final result is a spectacular one-off that we will never be able to recreate. Notes of chocolate syrup drenched vanilla bean ice cream, Bourbon soaked dark chocolate, your granny's sticky toffee pudding, and caramel nougat filled chocolate candy bars. We're super stoked on this one.
